You do not need to use a pressure cooker for green beans,if you do use one, you probably won't like them, yuk
I can tomato's for my mom,You will need a large kettle, big enough to hold 6 quart jars in a circle. You will need a jar lifter too.
Have jars washed and ready to fill, put 1 tsp of Canning Salt
in each jar.
All you do is fill a large kettle with water, bring to a boil, place tomatoes into the hot water for 30 to 40 seconds, take out and put into cold water, the skins will fall off with a little rubbing,if one is hard to peel, just drop it back into the hot water,as you peel the tomato's,cut them up into the jars ,use the handle of a wooden spoon to get the tomatos to the bottom, and you will not want alot of empty space ,fill to the top.
Once you have all your jars full, wipe around the top of the jar.
Put new lids and rings on the jar, tighten, then put into the canner, once you have all the jars that fit, cover with enough warm water to cover the jars, cover kettle and bring to a boil, turn down to a nice simmer and cook for 45 minutes. I place the cooked tomato's on a bath towel,to keep it from touching a cold counter top(could break jar) then you just wait until you hear the popping sound as they seal,if one doesn't seal, you can just put it in the fridge and use it within a couple days.
I am going to can my own this fall, my mom has enough to last her for another year, hope you enjoy doing them, it is fun to do when you get the hang of it.
Just be sure to remember the canning salt, won't taste good without the salt !!!
You can can acidic things like tomatoes without a pressure canner.
I think it's called cold packing--check that Bell link somebody already posted.
Other stuff requires a pressure canner.
You can do the tomatoes in a water bath, but you'll need to do the green beans in a pressure cooker.
I was gonna say cas, but you said that already.
Here is a wonderful website that shows you how to can OR freeze:
